Bakery, with its rich history, represents a legacy passed down through generations and closely linked to different communities and traditions. Particularly in the national context, this activity assumes a central role, with a fairly widespread presence of bakers in every urban center, village or hamlet.

However, the bakery profession often faces many challenges, which include competition for semi-finished products, the changing needs of the contemporary market, the need to recruit qualified staff, as well as managing complex working hours and wages.

With the aim of enhancing the role of the baker, the Study and Research Center of the National Confederation of Artisans and Small Businessmen (Co.N.A.P.I. Nazionale) developed a questionnaire aimed at gathering the opinions of artisans, entrepreneurs and professionals in the sector.

All data collected will be treated confidentially and used for the purposes of this research, in the context of the Study Report “Bread, Crafts and Business,” which will soon be available on the website www.conapinazionale.it, in the section dedicated to “Studies and Research.”

The data analysis will also provide the necessary information to enable the federal government to adopt policies and measures to support and promote the development of the baking industry.
