The National Confederation of Artisans and Small Entrepreneurs (Co.N.A.P.I. National), of which I am honored to be its national president, recently released the results of the study “Bakers, Crafts and Business,” conducted by our Study and Research Center.
This report, which is the result of careful processing of questionnaires administered to bakers throughout Italy, offers a detailed and up-to-date look at the dynamics that characterize the bakery sector, a sector that harkens back to our origins from when we were the Italian Bakers Association.” What is now known as Co.N.A.P.I was founded in Rome in 1994 as the Italian Association of Bakers and Pastry Chefs (A.P.I).
For several years, the association has been primarily concerned with protecting the interests and promoting the demands of its members, namely bakers, pastry chefs and related, to institutions and political figures, making itself a protagonist in multiple institutional confrontations.
In 2006, however,
following numerous requests from our members, we decided to broaden our horizons and deal with small businesses and artisans throughout the country. Since then we have been recognized by the Ministry of Labor as a “Most Representative” employer entity. To date we have more than 70 branches throughout the country and have signed about 35 National Collective Bargaining Agreements (CCNLs). But our interest in bakers has never ended, and for this reason the Co.N.A.P.I. Study and Research Center has in recent months carried out a survey of the territory, through the formulation of a questionnaire, reflecting the needs of bakers alone.
In fact, the commitment of the “Bakers, Crafts and Business” Report prepared by the Study Center stems from the conviction that the bakery sector is a fundamental component of the economic and social fabric of our country. Bakery is not just a craft, but a tradition that has been handed down from generation to generation and continues to evolve thanks to the study, passion and dedication of our artisans.
We are proud to support our members in their professional development and to promote initiatives that enhance their commitment and skills.
I invite all of our readers to check out the full Report to learn more about the opportunities and challenges facing the industry(https://www.conapinazionale.it/wp-content/uploads/2024/08/Panettieri-artigianato-e.pdf)
The Confederation will continue to vigorously support Italian bakers, providing them with tools and resources to successfully meet the challenges of the market and to keep the artisanal baking tradition alive.
